Chocolate Cake (from the book "Baking Without eggs")

1 and 1/2 cups flour (6 oz)
3/4 cup sugar (6 oz)
2 tbspns baking powder
7/8 cup milk
1/2 cup cocoa
3 tbspns oil
1/4 tspn salt
1/2 tspn ground cinnamon

Sift together the flour, cocoa, baking powder and salt. Add sugar. Add oil to milk (do not attempt to mix) and pur over dry ingredients. Mix well together.Bake in a greased 7-inch square loaf tin, or in 2 sandwich tins in a slow oven - 325F (Gas 2) for 40-45 minutes. Ice with Chocolate Fudge Icing or with Water icing and decorate with cherries, etc. as desired.


Chocolate Icing:
Use either dark, or milky bar, chocolate.

Merl 2 oz chocolate and 2 tbspns water together in a bowl over hot water. Blend in enough icing sugar to make the consistency required for coating, spreading or piping. For extra gloss, add 2-3 drops oil.
